The largest yard is situated at the foot of the “Castelfeder” Biotope adjacent on our winery. This debris cone was formed over thousands of years from sand- limestone and porphyry from the surrounding mountain slopes. The soil thickness is about 10 to 15 m.

The Lagrein an autochthonous variety that is mainly cultivated in South Tyrol, matures between the end of September and the beginning of October.

The mash is fermented in steel tanks for 14 days at a controlled temperature. Malolactic Fermentation and subsequent maturation for 14 months take place in 15Hl wooden barrels.

The evaporation of alcohol and water leads to a concentration and balanced fining of the wine.
