Glassier. Pinot Bianco (Weissburgunder)
From spring onwards, the “Ora” sets in at exactly 2pm, resulting in a decrease in humidity. When the humidity is
lower, there is less chance for harmful fungi to reproduce and multiply. This allows for the cultivating and growing of the tightly bunched-together grape variety to occur with significant
ease.
This sort of wine is harvested in the first week of September. The grapes are pressed immediately after and fermented
at a controlled temperature. The wine is stored in concrete barrels on the fine lees for a few months.
